Executive Chef Simon Treller has built his career working alongside some of the world's leading chefs across New Zealand, Canada and Australia, with experience spanning luxury lodges, private yachts and acclaimed hatted restaurants.

Drawing on a career shaped by exceptional culinary environments, Simon's cooking is guided by seasonality, outstanding produce and a philosophy of letting quality ingredients speak for themselves. Influenced by Mediterranean flavours and years of international experience, his approach combines technical precision with understated elegance.
